DEBRANZYME X
Debranzyme X is a food grade Pullulanase made from a refined strain of Bacillus subtilis through liquid submerged fermentation. Pullulanase is an enzyme that catalyses the (1,6-α- D) glucosidic linkages in liquefied starch to produce linear oligosaccharides. It is used as a processing aid in the manufacture of starch hydrolysates (maltodextrins, maltose, and glucose) and high fructose corn syrup (HFCS), and in the production of beer and potable alcohol.
FUNCTION PRINCIPLE
Starch is composed of amylose, a virtually linear glucose polymer in which the glucose residues are linked via α-1,4 glycosdic linkages and amylopectin, in which the side chains are linked via α -1, 6-glycosidic linkages. Debranzyme X rapidly hydrolyses the α- 1,6 glycosidic linkages and produce branched dextrins, maltose and maltotriose.
PERFORMANCE CONDITIONS
Working pH range 3.5-6.5, optimum 4.0-5.0;Temperature 25-65°C ,favorable at 50-60°C .
DOSAGE GUIDELINE
0.15 - 0.3 kg of Debranzyme X per ton of dry starch material.
