BREWZYM ALDC
Brewzym ALDC is a new advanced food grade alpha acetolactate decarboxylase produced from refined strain of Bacillus subtilis through submerged fermentation.
Brewzym ALDC can quickly and effectively catalyze the decarboxylation of acetolactate to generate acetoin and control the accumulation of diacetyl, thereby speed up the brewing process and regulating the flavor of the products. ALDC is widely used in brewing and other food industries.
KEY BENEFITS
》High concentration with less dosage
》Broad work pH and temperature
》Lower fermentation time, high production capacity
》Avoid high level of diacetyl
》Gluten reduction, chill haze reduction
》Maintain the special flavour of beer
PERFORMANCE CONDITIONS
Working pH range 3.0-7.5;Temperature 4-70°C .
DOSAGE GUIDELINE
10-15 mL of Brewzym ALDC per ton of cold wort and 4-10 mL of Brewzym ALDC per ton of beer.
(Dosage optimization should depend on the material variety and individual difference.)
