SUNBAKE XSR
SUNBAKE® XSR is a concentrated Xylanase produced from a refined fungal strain of Trichoderma reesei through fermentation. This enzyme rapidly degrades ß-1,4- xylosidase from xylan molecule and hydrolyses it to be xylo-oligosaccharides and xylose. It´s rich in endo- ß-1,4-xylanase, an enzyme that hydrolyzes the xylan component incereal grains.

PERFORMANCE CONDITIONS
Working pH range 6.0-10.0, optimum 7.0-9.5; Temperature 25-75°C , favorable at 37-50°C .
DOSAGE GUIDELINE
10 - 50 ppm of SUNBAKE® XSR; the optimum dosage depends on the quality of flour and different bread process. It must be determined by application trials.
